Bolognese Cheat! Is there anything better than a 5 ingrediant 2 minute recipe for a wednesday evening?!
On Wednesday night we had a dinner dilema… we were supposed to have fajitas and the wraps had gone mouldy… with 35 mins before I had to be at a meeting! So cheats bolognese was born…
Start by browning your beef mince, add a beef stock cube, a heaped spoonful (or half a small jar) of green pesto and a tin of chopped tomatoes… leave it to simmer while your pasta cooks and hey presto – you’re done!
I served ours (as usual) with a mountain of grated cheese and a garlic bread from the freezer (which cooked in the same time) which made a great emergacy dinner. There was also plenty left over for lunch on Thursday and Friday too so I’ve unintentionally scored with 6 portions!
I quickly priced up all of the ingrediants (minus the stock cube as I had these already) and it came to an £10.01 which does include the whole block of cheese… so I reckon if you allocate the costs appropriately it cost around £5 or 83p per portion… that’s really not bad at all!
